I have just joined a CSA. Follow my experience by checking out my blog. I will chronicle what items I receive each week and what recipes I use to consume them.

>>to find out what vegetables we're cooking this week.
2 cups cooked brown rice
2 T olive oil
½ teaspoon Roasted Red Pepper flakes
½ small onion, diced
2 garlic cloves, diced
1 teaspoon sea salt
½ teaspoon freshly ground pepper
Your choice of available vegetables:
***swiss chard, zucchini, grated carrots, mushrooms, tomatoes (whatever you have available)
parmesan cheese, shredded
In a large saucepan, heat the olive oil. Add red pepper flakes and cook for 1 minute. Add onion and cook until translucent. Add salt and pepper. Add garlic and other vegetables and cook until greens are tender.
Make a couple of depressions in the vegetables and crack eggs into each depression trying not to break the yolks. Cover and poach the eggs for 3 - 5 minutes. Serve over brown rice and sprinkle with cheese.
